Lunch box

 Recently, my niece Tammy began a new job, and asked for lunch ideas.

I love my 3 teir stainless steel tiffen - and often think a two teir unit would be handy! The top 'stand alone' is great for restaurant left overs, and helps with principle 3 from yesterday's post, eat till 80% full. 

I usually have salad in one layer, and am a big fan of rice/ quinoa and lentils or other beans! Nori rolls and other bento box items are great. 

Tiffen and utensils 

A couple of sourdough pancake/ leaf fritters are good as well.  I usually make batches of food that will last several days, and bring some of what I have on hand. A baked potato or yam is yummy. 

I've been sprouting the last couple of years, so salads usually include greens from the Farmers Market, sprouts, summer veggies (or in fall /winter, cooked) chopped olives, fermented veggies, ... add what you love!!

I have a larger cooler bag that holds all 3 tiers, with a pocket for an ice pack, but recently made this bento bag for holding just the top tier! (I lined mine with a second fabric rectangle) I made the napkin roll with pockets for my wooden utensils several years ago, it fits in the bag, under the tiffen! (I made one as a teen - Thanks, 4-H sewing!!)

One of Tammy's friends suggested keeping a small Crockpot at her office, to heat up items. One tier of my tiffen would easily fit in my simmer Crockpot.

  1. When I need to bring lunch, I just bring a chunk of Swiss cheese in a plastic bag. It warms up by lunch time to a good eating temperature.

  3. Those sound so healthy! I used to make tuna or ham sandwiches for lunch on days I didn't go out to eat. Sweet potatoes sound like a good idea, too.

    1. As a kid, I usually had sandwiches in my lunchbox, plus a homemade cookie! After we went gluten free in '09, I rarely pack something with bread - yesterday I put half a small squash with mushrooms, a potato and Octoberfest sausage in the air fryer - mmm!!
      And yes, sweet potatoes would be great!
